No-Bake Coconut & Vanillla Matcha Energy Bites {Paleo, Vegan}

These energy bites might be small but they are packed with energy.

Made with healthy whole foods and a hint of vanilla, these little bites are perfect as a post-workout snack or to hold you over between meals. They also pack well as an on-the-go snack!

These bites are sweetened with dates which are loaded with potassium (they actually contain more potassium per gram than bananas do!) and will help assist with post-workout recovery.

I like to double up this recipe and stick half in the freezer so I can always have them on
hand as an easy and healthy snack. They’re good in the freezer for up to 3 weeks.

 

No-Bake Coconut & Vanillla Matcha Energy Bites {Paleo, Vegan}

Makes 16 bite-sized energy balls

Ingredients

  • 3/4 cup dates
  • 1 tbsp Naked Matcha’s Culinary Grade Organic Matcha
  • 1/2 tsp pure vanilla extract
  • 1/4 cup hemp hearts
  • 1/4 cup raw hazelnuts
  • 1/4 raw almonds
  • 1/4 raw pecans
  • 3 tbsp unsweetened coconut flakes

Directions

In a food processor or blender, pulse dates vanilla and matcha. Add hemp hearts,
hazelnuts, almonds and pecans. Mix until well combined and a thick paste has
formed.

Divide the paste into 4 balls. Further divide those balls into 4 smaller balls. Roll
each ball in coconut flakes.

This recipe is fairly forgiving so feel free to add other nuts or seeds (to a total of
1 cup) if you like. The flavour will be a bit different, but it will still taste delicious
